From remarkably old vines planted in 1902, this is a deeply concentrated and finely detailed expression of the variety, combining bright citrus and green apple with ripe nectarine, white flowers, beeswax, and subtle lanolin. The palate is taut and energetic, with a beautifully textured core of orchard fruit, citrus zest, and stone, framed by vivid acidity and an unmistakably saline, chalky minerality. Long and persistent, the finish brings notes of lemon, wet rock, and delicate bitter herbs, balancing richness with remarkable precision and freshness. A profound, age-worthy Aligoté that would pair beautifully with oysters, shellfish, grilled fish, escargots, gougères, roast chicken, and fresh goat cheese.
